Mondo Londo - They were in the first season, kinda look like big fish. Appeared in 'The war prayer' and 'Deathwalker' prominently, the first is where Sinclair insults one to get closer to an alien hater. The second is when the Abbai and league worlds ask for the head of deathwalker, the main speaker being the Abbai ambassador.

Only thing I can recall of them is they were interested in B5's ability to supply itself with food. So I made the link of gardening.

As shown in S1 by Sinclair, Humans cover the spectrum of philosophy... from Vorlon to Shadow so it'd be impossible to define humans with one philosophy. But from a B5 alien perspective, we all have one thing in common... we build communities (from Delenn).

And as KoshN pointed out, Sheriden worked for the Vorlons, became president of the Minbari and other races, went to live on Minbari, married a Minbari and then became the leader of a Minbari organisation. Not to mention the Minbari souls are crossed over with humans.
