Martian Sucessor Nadesico's beginning is top notch. It ranks right up there with Neon Genesis Evangelion's. Also, if you're for cuteness, Love Hina always seems to bring a smile to my face.
Tank! The Opening Theme Song to Cowboy Bebop. Performed by The Seat Belts, led by legendary composer Yoko Kanno. Masterful music. She did almost all of the music, if not all of it for the series.
